Spicy Vegan Pot Roast - made with jackfruit~ a recipe I created last year and I can confirm this is still my favourite roast! It’s just perfect addition to the table on a sunday or for festive celebrations. Recipe below 💛✨ Ingredients: 🌱 1-2 cans jackfruit 🌱 1 onion 🌱 4 garlic cloves 🌱 ½ scotch bonnet 🌱 1 tsp all purpose 🌱 ½ tsp allspice 🌱 ½ tsp black pepper 🌱 ½ tsp mustard powder 🌱 1 tsp basil 🌱 1 tsp rosemary 🌱 2 thyme sprigs 🌱 1 tsp molasses 🌱 1 tbsp tomato paste 🌱 1 cup of vegetable stock 🌱 1 cup mushroom stock 🌱 1 tsp browning (optional) 🌱 2 carrots 🌱 2 red potatoes 🌱 ½ red onion Method: 1. Preheat the oven for 200oC. Saute onion in a large sauce pan with oil until translucent. 
 2. Add the garlic, thyme and scotch bonnet and cook for another minute.  
 3. Add the jackfruit and all the spices and herbs and fry for a further 5 minutes, stirring occasionally.
 4. Add the molasses, tomato paste and stir until incorporated. Then add the mushrooms and fry for a further minute. 
 5. Then add the vegetable and mushroom stock and cook down for 5 mins. Remove from heat.
 6. In a baking tin add the potatoes, carrots, red onion and any vegetables you desire and drizzle with oil and salt. Then top with the jackfruit mixture.
 7. Cover the baking tin with foil and cook in the oven for 50 mins and remove the foil in the last 20 mins. Then it is ready to serve up! . . . . . . . . . . . . . . . . . . . . . . . . . . . . . .

Instructions

Step 1
