Classic Chocolate Chip Cookies

These are perfect for cookie boxes, potlucks or just for yourself!
They rarely make it out of the house because they are my personal favourite. Make sure to let the dough chill in the fridge for at least two hours, although I prefer a 24 hour chill. Enjoy!

Instructions
Step 1
1. In a medium size bowl, whisk together the flour, baking soda and salt. Set aside.

2. In the bowl of a stand mixer with the paddle attachment or with a hand mixer, beat the butter and sugars until they are light and creamy, about 2 minutes.

3. Add the egg and vanilla and beat again.
Step 4
4. Add in the flour mixture and mix with a spatula just till combined. Do not over mix!

5. Fold in the chocolate chips.
Step 6
6. Refrigerate for at least 2 hours, ideally 24 hours. These can be refrigeated up to 72 hours if need be.

7. When ready to bake, preheat your oven to 350 degrees F and let dough sit at room temperature, about 15-20 minutes to allow the dough to slightly soften.

8. Line your cookie sheet with parchment paper and set aside.
Step 9
9. Scoop out your cookies using a 2oz scoop and place the dough balls on the prepared cookie sheet, about 3 inches apart. Add more chocolate chips on top, if you like.

10. Bake for 10-13 minutes, or until golden brown. then remove from the oven and allow to cool for 5 minutes on the tray before moving the cookies to a cooling rack to cool completely.
