Instructions

Step 1
Preheat oven to 190°C. Spray 20 round-based patty pans (30ml capacity) with oil. Using a 7cm round cutter, cut 20 circles out of the pastry. Line patty pans with pastry rounds, pressing to remove any air pockets, and prick bases with a fork. Bake for 8-10 minutes or until pastry is light golden brown. Set aside to cool.
Step 2
Meanwhile, heat oil in a non-stick frying pan over medium heat. Add onion and garlic. Cook, stirring occasionally, for 5 minutes or until onion is very soft. Add spinach and cook for 1 minute or until spinach starts to wilt. Transfer to a bowl and set aside to cool.
Step 3
Divide spinach filling evenly between tart cases. Whisk eggs and cream in a small jug and season with freshly ground black pepper.
Step 4
Pour egg mixture carefully into each pastry case, dividing evenly. Crumble goat’s cheese over. Bake for 15 minutes or until filling is set and light golden brown. Set aside for 5 minutes before serving.
