Instructions
Step 1
Heat the olive oil in a medium saucepan over a low to medium heat, add the onion, garlic, carrot and spices and season with a little salt and pepper.
Step 2
Cook for 3-4 minutes until soft, then add the tinned tomatoes, chickpeas and balsamic vinegar and cook for a further 5 minutes.
Step 3
Put the washed spinach in a microwaveable bowl, cover and zap on high for 1-2 minutes, until well wilted, or wilt in a dry pan. Remove and, as soon as it's cool enough to handle, squeeze out any excess water. Stir the spinach into the chickpeas.
Step 4
Reheat your jacket potatoes in the microwave for 2-3 minutes, or until hot (or in the oven), split them down the middle and spoon in the smoky chickpea mixture. Top with the grated cheese and serve.
