For coating the pan:

Step 1
In a bowl whisk vigorously eggs and icing sugar (about 5 minutes)
Step 2
Sift In flour and baking powder and add melted butter and lemon zest.
Step 3
Mix well using a spatula until combined.
Step 4
Let the batter chill in a fridge for 1 hour.
Step 5
Meanwhile, preheat the oven to 200C
Step 6
Coat the Madeline pan with butter and dust with flour.
Step 7
Drop batter by heaping Tablespoon into the prepared pan. You need about 1 tbsp of batter for each cookie. Fill in only 2/3 of the pan as it rise well. Keep the remaining batter in the fridge.
Step 8
Bake for 10 minutes or until golden brown, let it cool and remove from the pan.
Step 9
When the pan is cooled, grease with butter again, dust with flour and fill with remaining batter. Bake.
Step 10
Sprinkle Madeleines with icing sugar if desired and enjoy!
