Creamy Garlic Parmesan Brussels Sprouts

Instructions

Step 1
Trim the base and remove any yellow or damaged leaves of brussels sprouts.
Step 2
Wash the brussels sprouts under cold water and pat dry with a towel and cut in half.
Step 3
Heat a large skillet over medium-high heat. Add oil and heat until simmering. Add garlic and sauté until fragrant.
Step 4
Stir in brussels sprouts, salt, and pepper. Cook without stirring too much, until sprouts turn golden in spots, 5 to 7 minutes. Set aside on a plate.
Step 5
Into the same pan pour the broth and bring to a gentle simmer.
Step 6
Add in the cream cheese, simmer for 3-4 minutes, whisking constantly until creamy and thickened.
Step 7
Return the brussels sprouts back into the pan, and continue to cook until tender. About 5-7 minutes. Check doneness with a fork.
Step 8
Take off the heat and sprinkle with parmesan cheese and freshly chopped parsley.
