Instructions
Step 1
Boil the potato in salted water until ready.
Step 2
Add 1tbsp olive oil to a large skillet, then add finely chopped onion and cook until soft and transparent. Add chopped mushrooms, salt, pepper, garlic granules and oregano, cook until golden, then transfer it to a large bowl.
Step 3
When the potato is ready let it cool a bit, then peel and run through a potato ricer or sieve and add to the bowl together with cream cheese and chopped coriander. Mix well until combined and add more salt and pepper if needed. Set aside.
Step 4
Cut phyllo dough into 5cm strips.
Step 5
Working with 1 strip at a time, brush it with olive oil, then place 1tsp of filling at one end of a strip and fold over to make a triangle(see video) jeep folding until the strip of pastry has all been used up.
Step 6
Repeat until all filling has been used.
Step 7
Transfer the triangles to the baking tray, lined with parchment and brush all over with the olive oil.
Step 8
Bake in preheated oven at 180C for 25-30 minutes or until golden brown

Serve with your favourite sauce and enjoy!
