Mix ingredients
Step 1
Add all ingredients except butter in the basin
Step 2
Beat in a kitchenaid or similar with a bread hook until it can be pulled apart to make a thin film
Step 3
Add butter. Knead butter in to dough until it can be pulled in to a uniform film.
Step 4
Wrap dough in plastic wrap and place in fridge for 30 mins.
Prepare the butter
Step 5
Prepare butter- cut butter in to lengthwise strips. lay out 5 strips on parchment paper and fold the paper in to a square. Turn it over and roll flat with a rolling pin. Place in fridge.
Roll out dough
Step 6
Flour work surface. Roll out dough to a large rectangle twice the size of butter slices.
Step 7
Place the butter in the middle and fold the dough over each side. turn over.
Step 8
Roll the dough out and fold as shown in video.
Step 9
Refrigerate for 20 mins

Repeat step 8
Prepare to bake
Step 11
Roll out the dough once more and divide in to fourths lengthwise.
Step 12
Create "s" pattern with dough strips.
Step 13
Butter pan(s) and line bottom with parchment paper. Spring form pans work best.

Place dough in to pan(s)
Ferment
Step 15
Put a pot of hot water on the bottom rack, and put your dough pan(s) on the top rack. Turn on oven light. Close oven.
Step 16
Let ferment for 2 hours or until double in size.
Bake
Step 17
Preheat oven to 340°F
Step 18
Brush egg liquid on top.
Step 19
Bake for 22 mins at 340°F
Step 20
Adjust temperature to 400°F and bake for 5 mins.
Step 21
Take out of oven and exaust the heat.
Step 22
Brush butter on top while hot.
Step 23
Let cool for a bit, and it's ready to eat! So delicious!
