Fresh, Handmade, Thin
2Scallion
Chopped
10gLeafy Vegetables
Optional
30gPeanuts
Toasted, roughly crushed
For the Topping
400gMinced Pork
with Some Fat, preferably
2 TbspCooking Oil
2 Tbspshaoxing cooking wine
½ TbsLight Soy Sauce
½ TbsDark Soy Sauce
½ TbsSweet Bean Paste
5 Tbsgreens

For the Sauce
Instructions
Step 1
Heat lard or cooking oil in wok and then add minced pork to fry for several minutes until slightly browned. Drizzle cooking wine around the edges. Then place light soy sauce, dark soy sauce and sweet bean paste in to mix. Further add fermented greens (Ya cai) in, continue frying for 3-5 minutes until dry and golden brown
Step 2
Dice garlic and ginger, slice green onion
Step 3
Mix all the seasonings (lard, diced garlic and ginger, peanut sauce, sesame oil, light soy sauce, dark vinegar, scallion, Szechuan peppercorn powder, sugar and chicken powder) in a serving bowl. Combine well
Step 4
Cook noodles in boiling water according to the instructions on the package and blanch leafy vegetables in the last minutes when the noodles are almost ready. Transfer the noodles to the serving bowl
Step 5
Top with pork topping, chopped scallion and toasted peanuts. Mix well before eating.
