Instructions
Step 1
Simply put pork belly in a pot filled with water, add a few slices of ginger, cooking wine, scallion(1) and Szechuan peppercorn, bring water to boil for 20 minutes or so.
Step 2
Peel, slice and shred cucumber; Dice garlic, ginger and green onion.
Step 3
Make sauce with chili oil, salt, light soy sauce, vinegar, sesame oil, sugar, Szechuan peppercorn, chicken powder, sesame seeds, diced garlic and ginger and scallion. Add a bit of pork broth in the sauce to mix.
Step 4
Remove pork belly from the pot and let it cool off. Simply slice it into finely thin slices. Place shredded cucumber at the bottom of a plate, top with sliced pork belly one next to each other, finally pour spicy sauce over the pork. Serve cold.
