Kale, Cabbage and Mushroom Salad with Lemon Sesame Dressing
Massage the sesame-based dressing into the chopped kale for a minute or two. It softens and tenderizes the kale so it blends perfectly with the crunchy cabbage and sautéed mushrooms.

Ingredients
2 servings
8 ouncesmushrooms
sliced
3 cupskale
chopped, tough stems removed
3 cupscabbage
thinly sliced
½ cupscallions
chopped
¼ cupcarrot
grated
½ cuppomegranate seeds
optional
FOR THE LEMON SESAME DRESSING
Instructions
Step 1
Heat 2 tablespoons water in a saute pan and water saute mushrooms until softened and tender. Allow to cool.
Step 2
Place chopped kale in a large salad bowl, add 2 tablespoons of the dressing and using your fingers, massage the kale for a minute or two until it starts to wilt. Add sauteed mushrooms, cabbage, scallions and carrot. Toss with desired amount of dressing. Garnish with pomegranate seeds, if desired.
Step 3
Blend dressing ingredients in a high-powered blender.
