Instructions
Step 1
Pound chicken with a meat mallet to 1/2-in. thickness.
Step 2
In a large skillet, heat oil and butter
over medium heat.
Step 3
Cook chicken 5-6 minutes on each side or until no longer pink. Remove and keep warm.
Step 4
Add spinach and salsa to pan; cook and stir 3-4 minutes or just until spinach is wilted.
Step 5
Place chicken in pan on top of spinach mixture.
Step 6
Add a slice of cheese to each chicken piece.
Step 7
Cover pan for a few minutes to melt the cheese.
Step 8
Serve over rice.
