Instructions
Step 1
Roughly chop onions, leek, peppers and herbs
Step 2
Coursely grate the carrot and courgette
Step 3
Fry the onion in a large pan until softened
Step 4
Add all other veg and heat until all softened slightly.
Step 5
Add all the other ingredients and simmer for 30 mins
Step 6
Take off the heat and roughly blitz with a stick blender
Step 7
Serve with spaghetti and meatballs, as a pizza sauce or freeze to add some veg to other meals
