Potato Leek Soup

I visited the Be Our Guest restaurant at Magic Kingdom and had the most amazing potato leek soup. I had to recreate it when I got home because it was so delicious. At the restaurant, the soup is poured over homemade potato chip. I poured my soup over kettle chips from the grocery store and I will not do that again. The chips at Disney were much better and honestly the soup is great without the chips.

Instructions

Step 1
1. Add oil to a large stock pot and heat pot over medium to medium high heat.

2. Add onions and leeks and cook until softened.
Step 3
3. Add garlic and sauté for 1-2 minutes.
Step 4
4. Add chopped potatoes and stir well until the potatoes are mixed well with the veggies.
Step 5
5. After you add in the potatoes, cook them for about 10-12minutes, until they are fork tender.
Step 6
6. Add veggie or chicken stock and scrap the bottom of the pot to release the bits of potatoes and onions.
Step 7
7. Simmer for 5-7 minutes and then add the heavy cream, butter, salt, pepper and garlic powder.
Step 8
8. Once the butter has melted and the soup has simmered for about 5 minutes, remove from the heat.
Step 9
9. Using an immersion blender, purée the soup until smooth.
Step 10
10. Garnish with fresh chives.
