Instructions

Pan-seared salmon

Step 1
Pat the salmon dry with paper towels. Sprinkle salt on both sides of the salmon, and then coat the salmon with a thin layer of flour.

Pat the salmon gently to remove an excess flour. In a large nonstick skillet, heat the vegetable oil over medium heat. When hot, place the salmon in the pan, skin side down. Cook for 3 minutes on each side (if the thickness of the fillet is greater than ½ inch, cook for 4 minutes on each side).

Cut each piece of salmon in half before packing in bento boxes. Just before serving, sprinting with a pinch of pepper and squeeze of lemon, if using.

Pork roll-ups

Step 4
Place the green beans and carrots in a small microwave safe dish and sprinkle with salt. Microwave on high for 60 seconds until slightly softened.

Place 2 beans and 2 carrots together on 1 slice of pork belly. Roll them up. If the pork slices are too narrow, layer 2 slices.
Step 6
In a large nonstick skillet, heat the vegetable oil over medium heat. When hot, place the rolls in the pan, seam side down, and cook for 1 minute to set. After the rolls are set, use tongs or chopsticks to turn the rolls, allowing them to brown on all sides. Remove from the pan and let cool for 2-3 minutes before cutting into bite-sized pieces.

Carrot egg roll

In a medium bowl, whisk together the carrot, eggs, mayonnaise, and salt until well combined. In a tamagoyaki pan or small nonstick skillet, heat the oil over low heat.

Add half of the egg mixture to the pan. Cook without stirring for 3 minutes or until the bottom is set but the top is still a bit runny.

Using a spatula, gently roll up the egg, starting at the edge opposite the handle and rolling toward the handle. Push the rolled egg to the side of the pan opposite the handle.
Step 10
Pour the remaining egg mixture into the pan. Using a spatula, lift the rolled egg so it can be coated with a new layer of egg mixture. Repeat step 3, rolling the egg toward the handle. Remove from the heat and let them completed egg roll rest for 3 minutes in the pan before slicing.
