Ingredients
4 servings
6eggs
hard-boiled, large, peeled
¼ cupmayonnaise
2 tablespoonscapers
rinsed and chopped
2 tablespoonsfresh dill
chopped
1 tablespoonlemon juice
1 tablespoonwhole-grain mustard
2 teaspoonshot sauce
½ cupyellow bell pepper
finely chopped
½ cupcelery
finely chopped, leaves reserved for garnish
4 sliceswhole-wheat bread
toasted
1 clovegarlic
cut in half
1 tablespoonextra-virgin olive oil
¼ teaspoonground pepper
1avocado
ripe, thinly sliced
fresh parsley
for garnish
Instructions
Step 1
Mash eggs in a large bowl with a fork or potato masher.
Step 2
Stir mayonnaise, capers, dill, lemon juice, mustard and hot sauce.
Step 3
Pat bell pepper and celery dry and stir into the egg mixture.
Step 4
Rub one side of each toast with garlic, drizzle with oil and sprinkle with pepper.
Step 5
Divide avocado among the toasts and top with the egg salad.
Step 6
Garnish with celery leaves and parsley, if desired
