A traditional Polish street food dish. A truly quick and easy dish, paired with my Homemade Garlic Sauce.
I grew to love these when I was introduced to them as I lived in Poland.

Ingredients

500gtomato passata
0.5onion
small, diced
1clove garlic
crushed
salt
½ tspground pepper
oregano
Basil
thyme
2bay leaves

Instructions
Sauce
Step 1
Lightly oil a saucepan.
Step 2
Add a half of a diced Onion, 1 crushed clove of Garlic and cook.
Step 3
Add 500g Tomato Passata and boil.
Step 4
Add a pinch of Salt, 1/2 of Ground Pepper and a tsp of Basil, Oregano and Thyme.
Step 5
Cover and allow to simmer.
Base
Step 6
Lightly oil a frying pan.
Step 7
Add 500g of diced Mushrooms, 1/2 a diced Onion and 1 diced Chilli Pepper and cook.
Toppings
Step 8
Ensure Panini bread is baked and sliced in half to allow two flat lengths.
Step 9
Add the Tomato Sauce as a base.
Step 10
Add the Mushroom Base on top.
Step 11
Apply another, thinner layer of the tomato sauce.
Step 12
Add Chorizo slices to each panini and top with cheese.
Step 13
Cook in the over for two minutes at 200°C to melt the cheese and harden Chorizo.
Step 14
Top with a small slither of tomato sauce and a garnish of fresh coriander.
