Barramundi with beetroot hummus, cauliflower and dukkah

Instructions

Step 1
Preheat oven to 325 F
Step 2
Make fresh or buy beetroot hummus and dukkah.
Step 3
Cut up cauliflower into pieces and steam. (Microwave or other)
Step 4
Coat cauliflower in oil of choice and add cumin, garam masala, and light turmeric. Add to pan that fish will also cook on.
Step 5
Add fish to pan, coat with oil of choice and add salt and pepper. Optional: squeeze some lemon juice over fish cutlets and or add slice of lemon on top of fish to bake.
Step 6
Add pan to oven for 15 min or more depending on how many servings you are making.
Step 7
Once cooked, serve up. Try to get the hummus to a warmer temperature or room temperature so it doesn't cool the food down quickly.
