Instructions
Step 1
Preheat oven to 150°C
Step 2
Place the sugar in a pan with 1 tsp water and heat until caramelised
Step 3
When orange, add in the cold cream and whisk until dissolved fully
Step 4
Remove from the heat, and stir in the salt, vanilla and milk
Step 5
Place the egg yolks in a bowl, adding a ladle at a time of the caramel mix
Step 6
After 3 ladles, pour in the remainder and whisk until blended
Step 7
Evenly divide the mix and bake for 45 minutes to an hour (until the whole mix just barely jiggles as one mass)
Step 8
Refrigerate for an hour
