Instructions
Step 1
1 Heat the oil in a heavy-based saucepan over a high heat, add the cumin seeds and fry for 30 seconds until slightly dark. Add the onion and fry for 7 8 minutes until soft.
Step 2
2 Add the ginger-garlic paste and fry for a few seconds until well blended, then sprinkle in the ground spices and season with salt and pepper. Cook over a low heat for a few seconds then add a couple of tablespoons of water. Continue cooking for a few minutes, stirring from time to time, until the oil begins to separate
Step 3
3 Add the peppers, stir and cook for about 8 minutes until they are softened but still hold their shape, then add the paneer and mix well. Add the sliced tomato, cover, and cook for a couple of minutes until soft but not mushy.
Step 4
Remove from the heat, garnish with the fresh coriander, and serve hot with rotis or parathas
