Instructions

Step 1
Heat oil in a wide skillet and add onions to fry a bit before adding carrots, cumin, cinnamon, cayenne and salt. Fry until onions are soft, about 10 minutes.
Step 2
Add lentils and broth or water and bring to a boil. Cover, reduce the heat to low, and simmer for 30 minutes.
Step 3
Remove the cover and add tomatoes and currants/raisins. Bring to a boil, reduce the heat, cover and let simmer for 10 minutes or until lentils are soft.
Step 4
Top with feta if desired and cover briefly for feta to get soft before serving.
