Instructions

Step 1
Drain the lentils and rinse them thoroughly. Leave them soaking in water while you prepare the rest of the ingredients.
Step 2
Cook the Basmati rice with 2 cups of water and 1/2 tsp of salt.
Step 3
Cut the cucumbers, celery and beetroot into cubes.
Step 4
Thinly slice the radishes.
Step 5
Slice the iceberg leaves and the parsley leaves and stems.
Step 6
Add all the chopped vegetables, the rocket and raisins into a large bowl and mix it thoroughly and carefully.
Step 7
Let the rice cool and rinse the lentils. Add them into the bowl and mix again.
Step 8
Make the dressing by putting all of the ingredients into a small bowl and whisk it until it emulsifies.
Step 9
Serve the salad in bowls and let everyone pour the amount of dressing they desire.
Step 10
Save the undressed salad in a glass container in the fridge. It will be good for lunch leftovers the next day. Add the dressing just before eating.
