Step 1
Cook your basmati rice
Step 2
Add the chilli and garlic and 1 tbsp of vegetable oil to a pestle and mortar and grind into a paste.
Step 3
Add two tbsp of vegetable oil to a large skillet and heat.
Step 4
Add the garlic and chilli paste to the pan and cook for 30 seconds.
Step 5
Add in the minced pork, breaking it up as it fries and cook until the mince has browned. Top and tail the peas and chop them into 25mm pieces and add to the pan.
Step 6
Add in the light soy sauce and stir in.
Step 7
Add in the Hoisin or oyster sauce and stir in.
Step 8
Add in the Kecap Manis (sweet Soy sauce ) and stir.
Step 9
Allow to simmer for 5 mins or until the sauce has reduced.
Step 10
Add two tablespoons of hot water.
Step 11
Reduce the heat and allow to simmer, while you fry the eggs, add more hot water if the pan begins to dry out.
Step 12
In another frying pan add 4 tbsp of vegetable oil and heat.
Step 13
Crack the egg into a ramekin or small bowl and slowly pour into the hot oil. Cook the egg until the edges are brown and crispy, the yolk should be runny. Remove the egg from the pan and rest it on a plate. Repeat with the remaining eggs.
Step 14
Add the basil to the mince and stir in for 2-3 minutes then turn off the heat and allow to rest for about 5mins.
Step 15
Plate up, add some rice to a bowl, next add some of the mince on top of the rice and top with an egg. Lick you’re lips and enjoy.
