Instructions
Step 1
Chop Zucchini into small pieces, Roughly chop spinach
Step 2
Coat Pan in a little cooking spray & cook garlic for a minute, add zucchini and cook for 5-6 min until fork tender
Step 3
Cook Gnocchi
Step 4
Add spinach, almond milk, sour cream & seasonings to taste, to the zucchini and cook for a further minute. Contantly stir until creamy and slightly thickened
Step 5
Split into 4 Portions and serve with feta on top
