The characteristic bitter taste of artichokes is due to a substance called cynarin, which is responsible for many of the beneficial properties of artichokes.
Artichokes are ideal vegetables for people who suffer from diabetes or for those who need to keep the glycemic index under control. In fact, artichokes are rich in inulin, a polysaccharide that is not used by the body for energy production and therefore improves glycemic control in diabetics.
