Instructions
Making Mdardra
Step 1
Spread out the half cup of lentils to clean from waste.
Step 2
Wash the lentil. Put them in the pot with cooking water covering them. Let the water boil for around 4 min.
Step 3
Once time passed, take the pot and run some water in it to cool it.
Step 4
Filter out the water from the pot, then add new cooking water to cover them and add around 2 tea spoons of salt. Taste the water, salt should be vivid.
Step 5
Once the water is boiling, add 1 cup of rice, and 2 cups of water, enough to cover the rice for 0.3-0.5 cm.
Step 6
Lower the heat temperature to just around boiling but barely boiling.
Step 7
Once the main pot ingredients dried out, turn off the heat and let it rest for 4-5 minutes.
Making the Onion
Step 8
Cut onion thin slices and extract their water using paper towels. Cover with wheat, then shake the onion and add them to a pan, add olive oil and ghee, keep on stirring till color is met - Make sure not to overcook.
Step 9
Pour the oil and ghee in the pan to the main food pot.
Serving
Step 10
Meal is ready to be served. Serve with yogurt on the side and grilled onion slices in the top.
