Instructions

Step 1
Preheat an oven to 200’C and prepare a lined baking sheet.

Step 2
Cut potato into wedge pieces and place in a pan of water.

Bring to a boil and par-boil for 8-10 minutes until slightly tender.
Step 4
In a small bowl mix together the olive oil, garlic granules, oregano, chilli, parsley, salt and pepper.

Coat the par-boiled potatoes with the oil mixture and spread the wedges on the lined baking sheet. Bake for 20-25 minutes until golden.
Step 6
For the vegan mayo, combine all the ingredients mixing until an even colour.
Step 7
Serve wedges hot with mayo.
