Instructions
Step 1
Add garlic, salt and pepper to eggs. Immerse chicken in egg mixture for 1 hour. Roll chicken in crumbs. Sauté in olive oil and butter until golden. Place chicken in large casserole dish. Reserve butter and oil.
Step 2
Sauté mushrooms in reserved butter and oil. Sprinkle mushrooms over chicken. Place half a slice of cheese over each piece of chicken. Pour broth and wine over chicken and cover with foil. Bake at 350 for 45 minutes. Remove foil for last 10 minutes of baking. Squeeze lemon juice over chicken just before serving.
Step 3
May be made a day ahead and refrigerated overnight.
