Ingredients

1.5 lbsChicken breast
or 2 lbs wings
oil for frying
1 tablespoonfresh ginger
grated
1 tablespoonsalt
1 teaspoonpepper

Instructions
Step 1
Cube the chicken, season with ginger, salt & pepper. Marinate for at least 2 hours.
Step 2
Combine Ketchup, mirin, Soy sauce, Honey, Mustard, brown sugar and Rice Vinegar. Stir well until all ingredients are combined.
Step 3
In a sauce pan, saute garlic and dried chilis until fragrant on low heat.
Step 4
Add sauce mixture to sauce pan and bring to a low simmer. Continue cooking on a simmer and reduce for about 2 minutes.
Step 5
Heat oil in skillet to deep fry the chicken.
Step 6
Coat the chicken in cornstarch
Step 7
Fry the chicken pieces for 2-3 minutes, remove and put on cooling rack until all are fried. Fry all chicken a second time for 4-5 minutes and move to cooling rack.
Step 8
Toss the chicken with sauce until covered
Step 9
Garnish with green onions and toasted sesame seeds.
