Instructions

Step 1
Preheat oven 350 degree. In a frying pan, heat the 1 teaspoon vegetable oil over medium high heat, add the 1/2 diced onions and saute until tender. Once tender, remove the onions from the frying pan. Add the 1/4 cup water and mushrooms to the pan, add a dash of salt and pepper. cook the mushrooms until all the water is gone. Mushrooms will be tender and begin to brown. Remove from heat. Whisk together 5 eggs, 1 cup of milk, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1 teaspoon dijon mustard, 1 Tablespoon dried chives. Stir in the sauteed onion, mushrooms, 2 cups of thawed and dried broccoli, and 1 cup cheddar cheese. Grease a casserole dish with vegetable spray. Pour egg mixture into the greased casserole dish and bake for 35 minutes or until eggs are set in the middle. Let stand 10 minutes before serving
