Instructions

Step 1
Preheat oven to 425°F
Step 2
Boil a large pot of salted water. Add potatoes to boiling water and cook 10-15 mins. Drain and move back to pot to evaporate any moisture. Brush a rimmed baking sheet with 1 T olive oil. Lightly crush each potato on baking sheet until about 1/2 inch thick. Brush with 1 T oil, salt, and pepper. Roast, rotating sheet halfway through until golden and crispy, about 25 mins. Cook at the same time as green beans. Keep the oven on for steak.
Step 3
Coat green beans in olive oil, salt, and pepper. Place on baking sheet and roast for 14-16 mind until crispy.
Step 4
Combine butter, scallion, and salt. Heat a large cast iron skillet over medium high heat for 2 mins. Pat steak dry and rub with 1 teaspoon olive oil, salt, and pepper and place in pan. Cook 5 mins each side, transfer skillet to oven. Roast until 135°F, 12-15 mins. Transfer steak to plate. Top with scallion butter. Let rest 10 mins.
