EVERY DAY BREAKFAST TOSTADAS

The “every day” in the title of this recipe isn’t just fi gurative: I eat tostadas most mornings for breakfast! They’re easy to assemble, and they’re a great vehicle for leftover vegetables and proteins. I use canned refried beans more often than not, but the homemade version in this recipe is simple enough to prepare if you have the time. There are countless ways to top the tostadas. I’ve of f ered a few of my favorites, but feel free to improvise.
