Garlic Cauliflower Fried "Rice"

Since fried rice is delicious but doesn’t lend itself to huge portions, I am a huge fan of fried riced veggies (which are super delicious and which you can absolutely FILL your plate with!).
This recipe is customizable - it’d be fun to amp up the veggies (dice up some carrots, peas, broccoli, or bell peppers and add them with the onions). I also think it would be delicious with fresh grated ginger root added in along with the garlic. This is wonderful topped with scallions or cilantro, and maybe even a squeeze of lime or a drizzle of gochujang or hot sauce.
Also, If you don’t have miso, you can use other things with an umami kick (like soy sauce).

Step 1
SET-UP: Dice onions. Mince garlic. Whisk together miso paste and rice wine vinegar in one glass. In a bowl, beat together egg and egg whites with a fork. Set up two big pans on the stove.
Step 2
Dry out your cauliflower. In one huge pan or two large pans (no oil), cook cauliflower rice over medium high heat til condensation evaporates. The drier the rice, the better it will brown when you fry it. Set cauliflower aside in one pan.
Step 3
Heat oil in the empty pan [medium-high]. Add onions, season, and cook til softened [5-10 min]. Add garlic and red pepper flakes, cook for 1 min til fragrant.
Step 4
Raise heat [high]. Add cauliflower rice, season well, stir to coat in oil. Let it cook undisturbed [5 min]. Stir, then leave it alone again [5 min] Repeat several times til it starts to brown. Season throughout.
Step 5
Add miso paste mixture and more seasoning, stir well. Lower heat [medium-low], push cauliflower to one side of the pan. Once pan is cooler, add egg mixture and scramble. Once egg is almost firm, stir egg all throughout cauliflower rice. Taste, adjust seasoning, and remove from heat.
