Instructions
Step 1
Mix wet ingredients together (squash, egg, ricotta)
Step 2
Mix dry ingredients together (flour, baking powder, salt, basil). Combine with wet ingredients and mix well.
Step 3
Add oil to nonstick pan and add mixture, one heaping tablespoon at a time into pan. Flip when they are golden on the bottom, then add a knob of unsalted butter to the pan and toss to coat. You can add fresh herbs to infuse the butter (rosemary, basil, sage etc.)
