This is my £1 version of the famous Wagamama Yaki Soba noodles. The distinctive flavour comes from using leeks instead of onion and adding a pinch of curry powder. And it totally works!

Step 1
Pan-fry the leeks in a splash of sesame oil and a pinch of curry powder over a high heat. After a couple of minutes, once the leeks have softened, add the peppers, mushrooms and beansprouts and continue to pan-fry for a few more minutes.
Step 2
Cook the noodles as per the instructions on the packet then drain and add to the pan.
Step 3
Move everything to the side of the pan and crack an egg into the empty side. Once the egg is 80 per cent cooked, scramble with a wooden spoon and mix everything together. Season to taste and serve with a sprinkle of sesame seeds and some chopped carrot.
