Pasta primavera is one of my favorite simple Meatless Monday meals.

Instructions
For the pasta
Step 1
Bring a pot of heavy salted water to a boil, then add pasta

Cook your pasta until Al dente (about 7-10min) and statin in a colander.

Pour ice cold water over your pasta to cool and prevent over cooking.
For the sauce

Pour 1 quart of heavy cream, Italian seasoning, salt pepper and garlic powder into a pot whisking ingredients together and bring to a simmer

Add in your cream cheese in cubes and occasionally whisk until incorporated. About 5 min.

Then add your shredded mozzarella cheese and whisk occasionally until thick. About 5 min

Start by adding 2 tablespoons of oil to a pan. Slice your tomatoes, and Julianne peppers and onions , and add them to a sauce pan on medium heat. Cut up fresh parsley and set a slide for later

Once your veggies have cooked down for about 3-4 min add in your seasonings (salt, pepper, Italian seasonings)

Add your pasta and veggies to your pot of sauce and mix thoroughly.
Step 10
Serve In your favorite bowl or plate, and top with the parsley that you set aside earlier. Add a dinner roll and enjoy! đ
