Ingredients

1zucchini
1Summer squash
1sweet onion
medium
2tomatoes
medium
2 tspminced garlic
prepared
2 Tbspextra virgin olive oil
1 tsporegano
1 tspbasil
1 tspparsley
½ tspthyme
½ tspsalt
¼ tsppepper
1 tspred pepper flakes
1 cupwhite zinfandel
or chardonnay
1 Tbsphoney
¼ cupparmesan cheese
grated or shredded, plus additional for topping
2 cupspasta
warm, prepared, Spaghetti, linguine, angel hair, penne etc
Instructions
Step 1
Chop onions, Zucchini, squash and tomatoes into medium sized pieces. In large sauté pan heat Olive oil add garlic, Zucchini, squash and onions. Add salt and pepper and sauté for about 5 minutes. Add parsley, oregano, basil, thyme and red pepper flakes and continue to sauté another 5 minutes. Add chopped tomatoes and sauté for 5 minutes. Once vegetables are soft and tomatoes are creating a sauce, add wine, honey and parmesan cheese. Simmer, uncovered, on medium low for about 15 minutes. At this point, you could add pre-cooked shrimp or pre-cooked chicken, heat thoroughly, or just ladle over your favorite pasta and top with cheese to taste.
