Ingredients

Black Bean Ingredients
16 ozdried black beans
soaked in water overnight
4garlic cloves
minced
1 bunchgreen onions
thinly sliced
6bay leaves
¼ cupapple cider vinegar
12 cupswater
1 tspkosher salt
1 cupbrown jasmine rice
rinsed and drained
3 cupswater
2 Tbspancho chili powder
2 tspcumin
1 tspsmoked paprika
1 tspgarlic powder
1 tsponion powder
⅛ tspcayenne pepper
½ tspkosher salt
ground black pepper
to taste
Green Poblano Sauce
1poblano pepper
large, seeded and chopped
⅓ cupolive oil
+ 1/2 Tbsp, divided
1 bunchfresh cilantro leaves
½ cuppumpkin seeds
shelled
¼ cupwater
2garlic cloves
1 tspcoriander seeds
1juice from lime
salt
to taste
pepper
to taste

Instructions
To Make the Black Beans
Step 1
Rinse and drain black beans
Step 2
Place beans in a large stock pot and cover with water
Step 3
Cover pot and let sit to soak overnight
Step 4
Drain water from beans and return beans to the stock pot
Step 5
Add in bay leaves, garlic, green onions, vinegar, salt, and water
Step 6
Bring mixture to a boil over high heat
Step 7
Once boiling reduce heat to medium-low, cover, and simmer for 1 ½ hours. Check beans occasionally to see if they need more liquid

Adjust seasoning to taste before serving
To Make the Burrito Bowl Rice
Step 9
Combine all of the ingredients in a medium saucepan
Step 10
Bring mixture to a boil over high heat
Step 11
Once boiling reduce heat to medium and allow to simmer until water is absorbed; about 20 minutes

Turn off the heat and cover the saucepan for 10 minutes to allow the rice to absorb all liquid
To Make the Green Poblano Sauce
Step 13
Heat ½ Tbsp of olive oil over medium heat and sautee the poblano until soft; about 5 minutes
Step 14
Place the poblano and the remaining ingredients in a food processor
Step 15
Pulse until the sauce is combined but not completely smooth. You want to keep some texture

Taste for additional seasoning

Serve on tacos, burritos, enchiladas, quesadillas, etc.
To Assemble the Bowls
Step 18
Divide the rice between four bowls
Step 19
Place ½ cup of black beans over rice
Step 20
Top bowls with sweet peppers, olives, vegan cheese, and romaine
Step 21
Drizzle desired amount of green poblano sauce over each bowl and serve
