roughly chopped
1kgbraising steak
cut into chunks
2parsnips
cut up
2carrots
cut up
1leek
sliced
3 Tbsptomato puree
200mlred wine
600mlbeef stock
3 springsfresh rosemary
for the dumplings

Step 1
preheat oven to 160oC
Step 2
heat oil in a large casserole dish

gently fry the onion for 5 mins until softened

dry the beef pieces with kitchen paper and coat in flour

add to the pan with the vegetables, puree, wine, stock, rosemary and some seasoning

(the veg and meat should be covered with liquid - if not top up with more stock or water)

turn up the heat, bring to the boil, cover and put in the oven

cook until the beef is tender - about 3 hours
Step 9
half an hour before the beef is ready, make the dumplings
Step 10
sift the flour into a large bowl and stir in suet, parsley and a lot of seasoning

add 100ml cold water and stir to make a soft, slightly sticky dough
Step 12
take the casserole out of the oven and discard the rosemary springs
Step 13
pinch off bits of the dough, roll into balls and place on top of stew
Step 14
return to the oven without a lid for 30mins
