Best scrambled tofu

I used to not like tofu since it has not much taste but it can taste amazing in combination with other ingredients. So far this is my favorite tofu recipe and works great in sandwiches.

Instructions

Step 1
Add chickpea flour and plant-based milk to a bowl and stir to combine. Crumble the tofu with a fork or your hands and add to the flour-milk mixture. Next, add turmeric, paprika (if using), and kala namak salt. Season with salt and pepper, then stir to combine.

Peel and finely dice the onion and chop the bell pepper and cherry tomatoes.

Heat olive oil (or 1 tbsp of water) in a frying pan and fry/ poach the onion until translucent. Add bell pepper and cherry tomatoes and keep cooking for approx. 3-4 minutes, or until softened. If you want to cook everything in the pan, then you can add the tofu mixture to the pan and keep cooking for another 10 min. If you prefer to bake it, then you can add the poached onion and veggies to the tofu mixture, mix well and pour everything in a baking tray. Heat up oven at 175°C and bake tofu for 15-20min or until golden.

You can use this dish in sandwiches or just as a side, the same way you would use scrambled eggs. Enjoy!
