Instructions
Step 1
Blanch Green Beans. Bring a large pot of water to a boil.
Step 2
Add 1 tsp salt and the green beans, and cook for 2 minutes.
Step 3
Drain and place in a bowl of ice cold water.
Step 4
Sauté. Heat the oil in a large skillet over medium heat.
Step 5
Add the onion and garlic and cook until softened.
Step 6
Add the beans, season with salt and pepper and saute until softened to your taste, about 5 minutes.
Step 7
Season. Stir in the butter, mustard, and lemon juice (if using).
Step 8
Check for seasoning and serve warm.
