Step 1
Heat oil in pan over medium heat. Add onions, garlic and carrots cook over medium low heat for ten minutes, until tender. Add the mushrooms and chicken, continue cooking for 5 more minutes.
Place tomatoes in food processor and process until coarsely chopped. Add to pot along with chicken stock red wine , basil 1 tablespoons salt and 1 1/2 teaspoons pepper. Bring to boil, lower heat and simmer, partially covered for 45 minutes.
