Ingredients

4chicken breasts
3potatoes
large, cut into wedges
1onion
large, thinly sliced
300gsweetcorn
4 Tbsplight mayonnaise
Peri Peri glaze
Spicy mix
Saffron seasoning mix
Instructions
Step 1
Heart the oven to 200C and bring a large pot water to the boil
Marinate the chicken
Step 2
Marinate the chicken in the peri peri glaze on a baking tray and keep aside
Step 3
Parboil the potatoes for 5 mins, then drain and let them dry in the colander for 1 min
Bake the chicken and wedges
Step 4
Toss the potatoes with some oil and the spice mix on a baking tray then put them, along with the chicken, into the oven to cook for 20 mins
Make the sweetcorn aioli
Step 5
Heat a little oil in a pan over medium heat and fry the onion for 5 mins, or until lightly golden.
Step 6
Add the sweetcorn and fry for 2 more mins, then tip the mixture into a bowl and leave to cool for a minute
Step 7
Add the mayonnaise and the saffron seasoning to the sweetcorn and mix well
