Instructions

Step 1
Peel and chop the apples and add to a heavy bottomed pan and heat over a low heat.

Add the juice of the lime and the lemon along with the peel
Step 3
Chop and add the ginger
Step 4
Add the spices, dried fruit and brandy
Step 5
Bring to a simmer and cover, stir every 5 minutes and cook for about 20-25 minutes until the mixture is thick and the apple mashes easily
Step 6
Remove from the heat, allow to cool and remove the star anise. Use in recipes such as the Coventry Godcake or mince pies.
