Instructions
Step 1
Begin with finely dicing the shallot and slice the avocado into strips.
Step 2
Crack the eggs and separate the yolks from the whites.
Step 3
Place in a glass bowl and add a tsp of apple cider vinegar.
Step 4
Melt the butter.
Step 5
Get a pot of water onto a light simmer. Place the glass bowl onto and begin whisking the eggs. Slowly pour in the melted butter whilst continuously whisking. Don't stop until you have a creamy, thick hollandaise sauce. Season with salt and pepper to taste.
Step 6
Using the same water, use a wooden spoon to create whirlpool with the water. Crack the egg into a ramekin and then add to the water. Simmer for 1-2 minutes until soft to touch.
Step 7
Toast the bagel and chop the dill.
Step 8
Assemble and enjoy!
