Instructions
Step 1
Cut vegetable into 1/4 inch thick slices
Step 2
Preheat oven to 450
Step 3
Arrange vegetable in single layer on baking sheet, sprinkle with salt and pepper and drizzle with 1Tbls olive oil.
Step 4
Stir together cheeses, bread crumbs, crushed french fried onions, parsley and remaining 2 Tbls of oil in a small bowl. Top vegetable with cheese mixture and bake until tender, about 5-7 minutes
Step 5
Heat broiler with rack 6 inches away from heat source. Broil until tops are crisp, about 1 minute.
