Preheat air-fryer to 180°C.

Dry the tofu cubes on a paper towel.

Stir together soy sauce and cornstarch in a bowl. Add more cornstarch if the sauce is runny.

Fry till crispy (3-5mins).

Stir fry the garlic and ginger until golden brown or fragrant.
Add mushroom and toss, let mushroom sear then flip the slices.
