Instructions

Step 1
Melt butter in large pot over medium heat. Add diced onions, celery, and carrots and cook until softened. Approximately for five minutes then add in the minced garlic and cook for another minute.

Step 2
Add the flour and stir to combine. Cook for 2 minutes of until the flour turns golden brown.

Add in chicken brother and half and half in splashes, stirring to combine. Don't add too quickly or you will break the roux.

Add in the thyme and mustard powder.

Step 5
If using uncooked chicken, add it to the broth. Bring to a gentle boil. If you boil too rapidly the chicken may become tough. Simmer until chicken is cooked through, about 10 minutes depending on breasts thickness.

Remove the chicken and let rest for 5 minutes, then dice it, and add it back to the soup. Let the soup simmer until desired consistency is obtained, it should continue to thicken as it simmers.
Step 7
Add in gnocchi and simmer for 5 minutes, or refer to package directions.

Reduce heat to low and add in spinach, and sprinkle red pepper flakes. Simmer until spinach has wilted. Server and Enjoy.
