1 tablespoonvegetable oil
8 ouncesbeef
sliced very thin
1onion
cut into thick slices
4yukon gold potatoes
cut into thick slices
1carrot
cut into large pieces
4fresh shitake mushrooms
quartered
8snow peas
1 clovegarlic
minced
½ cupsake
2 cupsdashi
1 tablespoonmirin
1 tablespoonsesame oil
½ cupsoy sauce
8 ouncesshirataki noodles
2 tablespoonssugar
½ teaspoonsalt
1 teaspoonground ginger
1 teaspoonmsg
Instructions
Step 1
Heat oil in heavy-bottomed pot, then stir-fry beef until cooked through. Remove beef, leaving as much oil in the pan as possible.
Step 2
Sauté onions until translucent. Add potatoes, carrots, and mushrooms and continue stir-frying for 3 minutes.
Step 3
Add sake and bring to a boil until you stop smelling alcohol (1-2 minutes). Add dashi, sugar, salt, garlic, ginger, mirin, sesame oil, soy sauce, and shirataki, then return the beef to the pot. Simmer partially covered for 30-40 minutes or until carrots and potatoes are very soft.
Step 4
Add greens and cook uncovered until cooked through.
