Spicy Bean Chilli

Ingredients
4 servings
2 Tbspolive oil
1onion
medium, peeled and thinly sliced
1 tsphot smoked paprika
to taste
1 tspground cumin
1 tspground coriander
1tin tomatoes
1 tinblack beans
or red kidney beans
1tin mixed beans
300mlchicken stock
or vegetable
1 Tbsptomato purée
1 tspdried oregano
or mixed herbs
75gcheddar cheese
grated
100gfull fat Greek yogurt

Instructions
Step 1
Heat oil. Fry onion for 3-4 mins, until softened.
Step 2
Add smoked paprika, cumin, coriander and cook for a few seconds, stirring
Step 3
Add tomatoes, beans, stock, tomato purée and dried herbs. Season with salt and pepper.
Step 4
Bring to a simmer. Cover loosely with lid and cook for 15-20 mins, or until sauce has reduced and thickened. Stir occasionally.
Step 5
Serve with rice, corn chips. Top with grated cheese and yogurt.
